Making this vibrant green juice is simple with a juicer: Wash all your produce, chop into manageable pieces, run everything through your juicer, give it a good stir to blend the flavors, then refrigerate for 1-2 hours (or overnight) before drinking to let the tastes meld and thoroughly chill.

Juicer Method

Start by prepping your ingredients: Rinse everything under cool water, and for apples and peaches, remove pits, cores, and any bruised spots to ensure pure flavor. Cut into sizes that fit your juicer's chute. About 2-inch pieces work well to avoid clogging.

Feed the greens first (kale and spinach) slowly through the juicer, alternating with the fruits to help push the fibrous leaves through. Follow with the apples, peaches, and lemon last to capture their sweetness and citrus zing at the end.

Once all juice is extracted, stir vigorously in a large pitcher or bowl for 30 seconds to evenly distribute the colors and nutrients. No one wants a layered drink! Taste and adjust if needed (add a splash of coconut water if too intense). Pour into airtight glass bottles, seal, and refrigerate for at least 1-2 hours, or up to 24 hours for peak freshness. Shake well before each pour. Yields about 32-40 oz (4 servings).

Don't have a juicer? Use this method!

No worries. Your blender and a bit of straining will get you similar results. Prep all ingredients as listed above, chopping into smaller 1-inch pieces for easier blending.

Add the kale, spinach, chopped apples, peaches, lemon, and 1-2 cups of filtered water, or your favorite liquid base (start with 1 cup for thicker consistency) to your blender in batches if needed. Greens first, then fruits on top.

Blend

Blend on high speed for 45-60 seconds until completely smooth and frothy. Stop and scrape down the sides as needed. Add a splash more liquid only if your blender struggles.

Strain the pulp

Set a fine mesh strainer or cheesecloth over a large bowl. Pour the blended mixture through in batches, pressing firmly with a spoon or spatula to extract every drop of juice. Twist the cheesecloth tightly for maximum yield if using that. Discard the dry pulp.

Finish and chill

Stir the strained juice well to combine layers, taste for balance (add ice or more lemon if desired), then pour into clean glass bottles. Seal and refrigerate for 1-2 hours before drinking. Shake vigorously before each serving. Yields about 24-32 oz (3-4 servings). Enjoy within 48 hours for best nutrition!
